This is a great post-workout shake for all your glycogen replenishing needs. Full of potassium, fiber, vitamin C, and magnesium and with a taste so sweet you will think your drinking a peach cobbler. Sean (the husband) and I picked about 15lbs of peaches yesterday out at Sauvie’s Island Farms. Peach trees are just magnificent. There is something so delightful and almost sensual about their colors and the lusciousness of the peaches on the branches and the sheer bounty they provide. These trees were literally overflowing with peaches. One tree had so many its limb and broken off from the weight of it all and mounds of rotting peaches mounded on top of it.
After making my smoothie, one of my kitties Rhoda decided to check it out…turns out sweet peach isn’t her idea of food…I guess that is just more for me!
3-4 ripe peaches, depending on size, pitted
3 -4 frozen bananas
1 tsp vanilla extract
5 drops english toffee stevia (optional)
1 cup h20 or more to desired thickness
Blend all ingredients till smooth and creamy.
Yields a little over 1 QT of smoothie
About 900 calories for the whole recipe depending on the size of your fruit. The whole things contains nearly your entire RDA of magnesium, Vitamin C and potassium.
